In the part of the movie where the eyeball pops out of the deadite's head you can clearly see that it is on a pole as it is moving. Look right under the eye to see it. You may need to put it on slow-motion.
I don't see how this is a slip-up. It's called low budget 1980's film making. They didn't have CGI and crap like they do nowadays...of course the eye was on a cable.
