At the start of the movie, the fat bloke,(can't remember his name) goes to the head of the monastery and asks about Ace. The Monk says, (And I quote) "No man carries with him a label", meaning they don't use names. But at the end of the movie the Monk says "Ace, you're back!". So they do use names.
Actually, he said in the beginning that no man *here* carries with him a label, meaning none of the monks go by names. By the end of the movie, Ace wasn't a monk anymore, so he went by his own name again. At least that's what I always took it to mean. ;o)

Yes, but the head monk still called him Ace, so he used a name.

Or maybe the head monk couldn’t think of anything else to call him.

well, they had a party after ace left. and this is a comedy so i think they just did that to keep a little bit of seriousness through the movie

I am going with the original poster on this; he did state that no man carries a name.
