Austin Powers: The Spy Who Shagged Me. - Missing Sky
During the scene where Dr. Evil and Mini-Me are singing "Just The Two Of Us," If you look closely you can see that the "Eye Windows" of the Volcano Do not have any Sky in them, just the blue screen backdrop of the set!

Actually this is visible even before that while Dr. Evil is playing the piano. The movie switches between this scene and the infamous scene where Felicity is unpacking Austin's bag in the tent while Austin is looking at the map. In this scene it is clearly nighttime. So, while the background in the volcanoe may indeed be a blue screen, it is meant to suggest that it is night outside, so it is not really a slip-up.
