In the Richard Donner version of Superman 2, which has a different ending, Superman uses his making the earth spin backwards to reverse time to undue Everything that's happened. He reverses time up before the villains escape the Phantom zone. But somehow the fight he had at the truck stop diner seems to have still happened. The old man behind the counter confirms this by saying, "Now hold on rocky, I spent a fortune fixing this place up." Shouldn't that have been erased from the timeline as well?
