The Richard Gere character says at the beginning of the scene, "I took the liberty of ordering everything on the menu." So since he ordered the whole breakfast menu, it makes sense that Vivian is eating a pancake and a croissant. And it is consistent with her character. She is a hooker living on modest means. She never lived the good life. Now she is in Edwards penthouse, and she doesnt care if shes eating pancakes with croissants. Shes eating it all. She never had it so good.
