It is just an illustration to show that the mirror wasn't invincible when removed from the bike. The artists felt it to have more of an effect to have the mirror shatter when dropped. I mean come on, this is a children's show. When asked "whats that?" timmy says "super bikes stupid mirror." It was just a small scene to show that it was indeed broken.
I am aware as to why the mirror appears on the garage table, like vol rule said, but the mirror should have had more than just a crack in it when it's on the table. I mean, come on! When Super Bike dropped the mirror, everything shattered, including the metal rim around the mirror! (I don't think is even possible because he doesn't throw it down, he gently drops only a few inches.) How can the animators think no one would notice the difference between a huge shatter to a small crack.
