When the animals are in the lady's house for the second day, and Chance gets rowdy because he hears kibble, there is a moment where the cat becomes startled. Pause the movie. It isn't the same cat! It looks more like a persian than a himalayan. Its head isn't as furry.
This is true, they did use at least two cats to play the part of "Sassy" this is noticable by the slipup you pointed out, also if you look closely you'll notice that throughtout the whole movie the cats eyes change colour from blue to a yellow-ish colour, and the cat's tail changes colour from a light brown-ish to very dark brown nearly black-ish colour.
