In the bar scene when Helen Hunt's character and Mel Gibson's character are madly flirting, in almost every shot of Helen, her hair has been moved behind her shoulder, poofed up, or shifted in one way or another. It's obvious that the final scene is the result of much, much editing (and the work of several hairdressers!).
