If I remember right, the rose was top heavy. The head of the rose ways more than the stim. Because the book was open for a second the rose almost fell out, that's why she had to replace it where it had been.
Yes, it's a slip-up. After the guys talk about her outside the cafe, it shows her inside. (Chapter 19 on DVD) She places the rose on top of the book with the book spine to her left. It is top heavy and starts to fall, so she turns the book (spine facing her), opens it,and puts the rose inside. You don't see her hands/arms moving about, but the next time you see the book, the rose is back on top with the spine to her left.
