In the scene before Tom Hanks gets on the Fedex plane when he is sitting in the jeep talking to Helen Hunt, just before she gives him the pocket watch, you can clearly see that Tom Hanks is not wearing his seat belt. The camera goes to Helen Hunt then back to Tom Hanks, and amazingly his seat belt is now on.
