I think the reason the scarecrow flips over twice is because we see a shot from the inside of the car, and the outside. Both shots show the car hitting the scarecrow and it flipping over the car. I think its just a Friday afternoon job on the cutting.

Yep, 2 seperate shots, done for drama. Several other movies have show crashes from 2 different angles, this is no different.
