It's the morning of the wedding. They show a lady unthawing the tulip border because of the snow. In the next scene, they show Fraunk and Howard shoveling the snow off the sidewalk where the tulips are...but guess what? The tulips clearly haven't been unthawed!!
I think that scene was supposed to be a montage of all the things they had to do to make the reception work and therefore weren't necessarily in chronological order. And it's either "thaw" or "defrost." "Unthaw" is a double negative that would in fact mean "to freeze."
