At the beginning of the movie,when Princess Buttercup first meets Vizzini, Fezzik, and Inigo, if you look really closely at Inigo, you'll see that he is a cardboard cutout.
It does look like it's a cardboard cut out, but if you watch carefully then you can see him blink.

Maybe Mandy couldn't be there the day they were shooting one of the angles. Remember they can move everything around every time you see the camera cut away.
