Just watch any episode of Sooty. Where it's a close-up on Matthew and Sooty, sometimes they give you a side view. At that moment if you look closely, you might be able to see Matthew's hand going into the back of the puppet. This also works on 'An audience with Sooty' and 'Sooty Heights'.
