Mr. Burns the one man who had his eyes ripped out clearly had blue eyes. Imhotep had brown eyes throughout the rest of the movie. It is obvious to tell when Mr. Burns's eyes are the only thing showing of his face just before turning to find the mummy staring him in the face. And you can tell that the mummy has brown eyes right before he is about to kill the Egyptoligyst....as you can see seing that movie 32 times pays off.
