In the pilot episode of Miami Vice, when we see James "Sonny" Crockett for the first time, he and his original partner Rodriguez are talking about how little money Miami Vice cops make. But, how can that be when Crockett drives a Ferrari and wears a gold watch. How can he afford those things if they don't make a lot of money?

Because he works undercover narcotics. The Ferrari and gold watch are probably seized items and used to bolster his "image" as a drug dealer. Happens all the time in narcotics work.
