At the very end when Rose lets go of Jack's hand he sinks but, since they are in salt water, Jack should have floated.

Then the Titanic shouldn't have sank, either. His weight pulled him down. He wasn't wearing a life jacket, either. Notice that all the people in the water wearing life jackets floated. For those who did not have life jackets on, (Jack, for example) would've grabbed on to wreckage and eventually drowned, or got rescued.
