I have the 'Best of' DVD set. Go to episode 1, slightly after 1 hour into it. Notice when KITT is 'driving itself' there is a guy wearing a tan bodysuit (matches the interior color) sitting behind the driver's seat, looking through a 'one-way' piece of glass in the headrest, and reaching his arms forward to steer. I'm assuming he has pedals in the back or something else to control acceleration and braking.
